The basic definition is "something you know and something you have". So you know your password and you have your phone. So after entering your password you get challenged for another token which you may receive via SMS, email, or one of these Authenticator apps. Most sites/apps that use two-factor auth have an option to use it only the first time you use that browser or log into that app. That way if someone was to guess or steal your password and try to get to your account, they would get challenged for the token and not be able to enter it.
It is definitely more secure and at the least if your banking app/website offers it, I would recommend setting it up for that account. Just a little extra peace of mind. Depending on what you store there, it's probably not so essential for your email, Dropbox, Evernote, etc accounts.
