With lots of them where I'm the IT admin I'll point out that a "Fusion" tier storage model will have the effect of more performance most of the time. That's a good way to have more storage and good performance.

After how much storage you need think about how much performance you need. My own usage and a subset of my users benefit from the fast storage same time just as many don't need to pay any premium for it. About 1/2 the Macs I buy are entry models that keep everyone happy.
