Sync to iCloud and iCal & Address Book???

It's my understanding that I need to make a choice as to whether I sync to iCloud or iCal and Apple's Address Book on my MacBook Pro. I like the idea of having day on iCloud, but would miss also having data on my Mac. I guess if I can't and opted for iCloud and got a new iPhone, when I synced the first time it would asked me if I wanted to download data from iCloud?
Would appreciate someone setting me straight.

iCal and Address book are the apps that read the data. They don't care where the data comes from. Point them to your iCloud acount. The data will be on your Mac and your iCloud.

Thanks, I'll try it again. After I set up iCloud originally, changes would show from iCal to iPhone, but not iPhone to iCal. This was the case with both iCal and Address Book.
