I'm going to trade-in my Iphone 7 and I've got my screen replaced. The screen isn't original because it isn't an authorized Apple repair.

So will Apple notice my unoriginal screen? And will it affect trade-in price and process so far?

    Yes on all accounts.
Unoriginal screen is less worth and they may even not accept it as a trade in.

In my experience, Apple will even refuse to repair your phone if there are any replacement parts on it, so I don't think they will accept it as a trade in, unless they only take a quick glance at it to make sure it's in usable shape. You might be ok if they don't take it in the back, and really look in it.
