    when I am tying a text. I only see the letters I am typing. At 1 time I could put in a letter and get 3 words to choose from. Then type in the second letter and get 3 more words to choose from.

    Welcome to iMore! Swipe up from the little white bar above the keyboard and your word predictions should reappear. They sometimes get hidden by accident, at least in my experience.
