    I like iMessage but there are some contacts with an email address only to whom I wish to send a SMS message because Gmail will not forward iMessages to an email account.

    I have tried setting up an account as SMS but every time I try sending a text, IOS says it is sending an iMessage.

    At this point I have disable iMessage but that feels like overkill. I would like a way to designate a few addresses as Not-iPhone/non-IOS.

    If the phone number you're texting to is not an iOS device then those text messages will automatically be sent as SMS. Having said that, without disabling iMessage, there's no way to natively pick and choose which numbers you want to designate as SMS only to owners of iOS devices.
