Why did all my data not transfer over from my iPad 2 to my new iPad Air 2

Thought that everything had been transferred over,thenI noticed that part of my notes were not there, looked further and the amount in my iTunes account had not been transferred as well.

Did you sign in to your iPad Air 2 using the same Apple/iCloud ID? If so, and if you are connected to the Internet via Wi-Fi, give it time to transfer/sync everything over. Also, what do you mean "the amount" in your iTunes account "had not been transferred" as well?
