Extreme Newbie Here - XML Document

Would someone help me with the rudiments of creating an iPod Touch "document based" application that creates an XML document? A text document instead of an XML document would be fine.

Is there an easy way to create a "subcell" of a cell? (That is, a subordinate cell that is indented or has some other indication of being a child of a cell.)
