Do you not know your MS Exchange password or have it saved somewhere else? If you have it saved in Apple’s Keychain, you can always go to Settings → Passwords to retrieve it.

Or just go into Outlook settings and manually input your password. I had to do that with my work email after iOS 14 update but it's worked fine since.

Do you think maybe I could restore back to iOS 13 from the from the iCloud and get my password. I thought I saved it in my keychain but for some reason I guess I never did.

Without knowing more about the server side but caring for this at enterprise level.....

Reset your Microsoft credentials if you've lost them. If you're happy with the way your account looks via OWA (web app) delete the local profile and set it up again when a particular device has issues.
