I have done all of the usual re-booting, testing, unplugging etc. My internet speeds are consistently over 100 mbs. I stream through Youtube TV, and it ALWAYS seems to buffer during sporting events not during movies, shows, or Netflix.

Make sure the tvOS version is up to date. In addition, it may be necessary on occasion to reset the TV.

Also note that sporting events especially, MMA or Boxing are usually heavily streamed, it COULD be an issue at the source.

Install the SpeedTest.net app on the TV and test your speeds when you are having the buffering issue. The TV has a gig ethernet port so make sure you are connecting to a router or hub that passes at least 100mb.
