Does iPhone Xs support different audio outputs for different apps at the same time?
Is it possible with the iPhone Xs to stream music (Music app/Spotify) through Airplay and at the same time have other apps like YouTube or Instagram send their audio to the iPhone speakers or headset?

I love the way you’re thinking but this is not (yet) featured on iPhones.

Such a shame, I love the living crap out of any product Apple creates but it’s the simple things where they drop the ball. Can’t be that hard to add.
Same goes for filming while playing music. Sometimes I like to record a moment in which the music that I’m airplaying is part of the experience. But when you hit record, the music pauses. But when you use Snapchat or Whatsapp for filming, the music keeps playing. Excuse my off topic drifting....

The filming and music can be created after the fact by using iMovie. And you can usually get the music to match the film
That way you don’t get any background noise. I do it quite a bit
