Is there supposed to be a toggle for this available in control center because I’m not finding it?

Yes, it is the right hand icon on the top row next to the Wi-fi Toggle

I'm not seeing it either on iOS 11.2.5, and iPhone 8+.

Yes, nice tip Tartarus. I need to use ForceTouch more. I think where it could be confusing as pointed out by MrMars is the lack of Air Drop control in Settings\Control Center\Customize Controls.

But I can to a degree now see how "associating" AirDrop as a sub feature to the WiFi or Bluetooth controls makes sense as both need to be on for AirDrop to work.
