I currently have an iPhone 7+ and Apple Watch Series 2 paired with it. I am running the public beta software on the 7+ but not the watch. I am being upgraded to an 8+ and I'm curious if there is a way for me to backup my current device and restore it to the new 8+ since I'm on the public beta? Would I need to setup the new device and get it on the same public beta version that I'm on currently (11.1 beta 2) or will I be able to restore a backup made on public beta to iOS 11 on new device without putting new device on public beta?

When you restore the device the new one needs to one on the same version of the OS or higher. Since the iPhone 8 will be coming with 11.0.x you will need to set it up as new then upgrade it to the PB of 11.1. After that you can restore the phone from the backup you took.

Make sure to unpair your Watch before you do the backup of the old phone so when you setup the new phone and repair your Watch you will have a backup of that as well.
