Why is my Mac always syncing to iCloud so slowly?

I've recently started using iCloud to back up all files on my Mac, MacBook and iPhone. However, the process seems to take forever on the Macs and I am using masses of data each day . Isn't the sync only supposed occur with files that are added / changed or deleted? It feels to me like the system is downloading and uploading all 50GB each day every day.

I don't want to be using so much data nor using up all the bandwidth. Suggestions?
