I heard that one is compressed lossless and the other one is uncompressed lossless but they supposedly have identical sound quality. How's that possible? If one is compressed and the other isn't? Will I notice a difference through apple earpods?

Welcome to iMore 😃 Thanks for the tough question haha.

Will you notice a difference between formats on your earpods? Definitely not. I think it would even be tough to notice a difference between .AAC (256kbps) and .AIFF (1411kbps) through the earpods. It's normally only noticeable though high end headphones or decent studio speakers. Audiophiles may disagree with me though.

As far as I know, the quality is identical between the 2 formats. Just different encoding types.
