How can I set up an audible notification each time I receive a text message

Are you trying to set up the alert for a specific contact or just for messages in general?

Try going to Settings - Sounds & Haptics - Textone That's where you can set your alert tones. If you want a specific tone for a specific contact, go to Contacts - (select your contact) - Edit - and Text Tone: you can make changes there.
