Why did I lose my apple pay from watch after I did a re-pair

I un-paired and then reset my watch. After that I restored the watch but I no longer have an option for Apple pay. I have Wallet but no wallet & apple pay option.

I assume it's a security thing. Anyway, can you not setup Pay again for the Watch?
