It depends on what kind of info you don't want to "share" with that PC, as, obviously, everything you want to sync will be copied on that PC. You can decide to avoid doing a backup of the iPhone on the PC, by selecting do a backup on iCloud on your phone settings (you can switch that off once the sync is done and do a backup on your PC), or, if you already synced and created a backup, just head over to preferences on iTunes and, once in the devices panel, Deere your phone backup. Other kind of information should not get synced unless you check them on in the iPhone managing panels of iTunes.
