After paying for Apple Music months after the 3 month trial and then cancelling the membership, will you be able to keep your music that's already been downloaded or will all of your music be taken away and be unavailable?

Good question! So when you download a song from Apple Music, you still technically don't own the song. You are essentially leasing it from Apple. You are paying the monthly subscription for the right to stream the music whenever you want. If you purchase from iTunes, then you would own the song and get to keep it. So to answer you question, once you end your subscription with Apple Music, you no longer have access to the downloaded music.
