I want to delete clash of clans on iPad and start over

I've tried to delete clash of clans from my iPad and start over, but Game Center has control of it. It isn't right being held hostage to a game which I enjoy very much.

The only thing you have to do is not sign in to Game Center if you do sign in then it would bring you back to where you left off if you don't then you would start fresh again I have had a new iPad and because I never signed in with Game Center it put as a new game
