How can I deal with a calendar event that won't delete?

The event is set from a 2016 date to a December, 2000 ending date

Have you tried editing the event and putting a realistic end date (NOT an end date in the past), perhaps this will remove the glitch and allow you to then delete the event? If that doesn't work then you will probably either need to live with it (ignore it) OR factory reset your phone.
