How can I unsync apps from my ipad and iphone & still leave them sync'd for other things

I just want the apps I download on each device to stay with that device only.
I still want to to be able to send/receiving messages etc.

Go to Settings -> iTunes & App Store and then disable the toggle next to "Apps". This will prevent apps installed on one device from installing on your other device.
