If it was so easy to simply reset the password of an iPhone backup do you really think it would even exist in the first place? It's a security feature that would be rendered completely useless if there was some simple way to disable/reset/circumvent it.

What "iPhone backup password"? The one you create, if preferred, via iTunes? If you're referring to the I loud passcode, you will need to use Apple online Apple ID and Passcode retrieval option.
