When I receive emails they are white as they should be, but when there is someone that has replied, it turns dark blue...and is literally impossible to read on the watch. Is there anyway to change this dark blue to any other color?

There is no way to do this that I'm aware of, at least not at this time.

Try switching the watch font to bold. This is done in the apple watch app. It will make overall text more readable and the email blue text much better until it is fixed.

Better yet, don't waste your money on an apple watch that will be obsolete and non functional within two years.
Instead, buy a real automatic and it will last you a lifetime. You are carrying your phon on your person anyway. These watches are ridiculous!!
