Typically, you don't need to close them. But if you want to, double tap the home button, scroll left/right to find the app you want to close, place your finger tip on the app and flick it up and away.

Very few actually run in the background. I only swipe an app out of the multitasking tray if there's a problem with it. Otherwise, iOS manages them well.
