Why won't my iphone 6 plus delete apps?

When pressing icon till shakes, an X never appears.

if its a stock app then it can't be deleted. For example the new apple watch app can't be deleted

↑↑Correct. But you can delete apps you have downloaded yourself. Just not those Apple put on your screen like Newsstand, Game Center, Stocks, Compass, Videos, Health and others.

It was untrustworthy for a short while. After a restore as new, it was trustworthy again.
