    Someone got my old phone and used the software wondershare and downloaded all my deleted text messages and emails. How can I stop this from happening again? If I delete my Icloud storage will that delete it for good?

    No. Put a passcode on your phone. Otherwise nothing will stop someone who physically has your device. Also turn on Find My iPhone so that you can remotely wipe the device if someone else has possession of it.
