Why can't I add photos to existing photo albums on my phone?

My iPhone 4 won't let me add photos from my photo stream to pre-existing photo albums on my phone. The albums say "from my Mac" as if they are locked due to the fact that they exist in iPhoto on my Mac. I just want to be able to sort my photos on my phone as I take them throughout the day.
