Pressing the home button twice brings up all open pages as well as listing recently called contacts. Deleting all recent calls in the phone app does not remove these listed calls

You can't remove specifc recents from the task switcher. You can turn that feature off completely though.

Settings > Mail, Calendar, Contacts > Show in App Switcher. That is where you can turn on or off what is shown in the App Switcher.

Welcome to iMore! What summary screen do you refer to? To delete recent calls, go to the phone app>recents > Tap edit in the top right > Tap the red - sign to delete individual calls. To delete all calls, tap edit, then tap "clear" in the top left corner.

There are no recents in the multitasking bar. Those are favorites. But as stated above, they can be turned off in settings.
