How can I change font size and color?

You can change the font size in the "Text Size" option in Settings.

There are some option with the basic color palette in accessibility but I don't think you have the option to change default font colors at all.

You can change the overall font size by going to Settings - Display & Brightness - Text Size and then sliding the lever to the desired position. I don't think you can alter the color of the font, however.
