Is it possible to set up an iPhone as new vs restoring it from an old one?

Setting up iphone as new vs restoring from old one

I am upgrading from iPhone 5 to iphone 6plus. Have too many apps on the 5 and unorganized (not in folders). I would like to start fresh and not have all the apps load into the new iPhone
