Gifting iPad to a Friend... Need Help

I have an iPad 3 that I want to give to a friend.
Questions:
1. How do I clear all me stuff off it, including iCloud registration?
2. How do I help him get it set up and put it in his name?
3. How do I get AppleCare put into his name?
