    Can an iMessaage be moved to email, notepad or other media? Can you include date/time stamp?

    You can copy and paste the message into the email. The time will not be included, only the message.

    For your question as already answered there are many apps just a few already named for you that you can certainly move your iMessage to be in a part or whole thing one I use quite a bit is Evernote and even believe it or not, The Native Notes app. Most all of these will insert a date on it's own so that may solve your question there.
