21.5" IMac vs 27" for beginner designers

Which would be better for me? I am just getting started with my surface design biz.

It's always better to have more screen real estate when doing any kind of design work...so if your budget allows for it, get the 27".

I'll pile on too. You might be a beginner now but when buying a computer think about the future. The bigger screen is going to really be more preferable. I hated going from a 17" MacBook Pro to 15" when doing Photoshop work. I eventually fitted my workflow to the smaller monitor but with the bigger monitor I didn't have to do that. Also consider the RAM I don't know what suites you'll be working in but more RAM is always better for design apps.
