iPad Air cellular without SIM - disabled functions?

I've pretty much decided to go for an iPad Air 64GB WiFi and cellular.
But there will be times when I won't be using the cellular (such as when travelling to avoid excessive roaming charges).
I may remove the SIM.

Can the cellular be disabled entirely?
Other than the obvious cellular disconnect, are there are any other functions that aren't available if a SIM is not present in the iPad? And if the cellular is disabled?

Or - you can use airplane mode and turn on wifi... however - this will make it such that the GPS receiver - which is built-in to the cellular radio - will not function and any location based services, having only wifi to base location on may be inaccurate depending upon the accuracy of wifi locations.

Anyone got experience of using the iPad cellular model without a SIM installed?
Does it work?
I can understand that the GPS may not be available - any other functions disabled with no SIM present in the device?
