I have an Apple Watch series 3 and I am trying to update the software. It say I need at least 3.1 free space and deleted downloaded apps but still say I don’t have enough space. So any suggestion on how to free up more space on an Apple Watch?

Tap on the Watch app and then go to Settings → General → About. You should see the storage capacity of the Watch as well as the available storage amount.

Just unpair the watch and pair it back with your iPhone and restore from the latest backup and then perform the update.
Unfortunately there is no other way.

You can do so under Settings > General > Reset > Erase Watch Content and Settings.
