Apple watch not reconnecting to phone (trying to avoid reset)

While playing with iOS 11 Developer Beta 2 I experienced some issues and initiated the "Reset all settings" option and with it, my connection to the Apple Watch was lost. I tried downgrading to iOS 10.3.2, but to no avail could get it to work. I am currently running iOS 11 B2 with my archived iOS 10 backup for content.

I have not reset the watch yet, but tried manually pairing, but the phone never sees the watch.

Has anyone successfully manually re-paired a watch and had the missing data sync over? I made a backup prior to the iOS so there are some days with gaps in the activity data (which I am guessing still resides on the watch).

You're going to have to reset the watch in order for it to pair with your iPhone properly.
