So, I'm a new Apple Watch user. I have the iPhone 7 and the Gen 1 Apple watch. Ref to emails accounts...I have 4 different accounts, but I only want to be notified for one of them. I turned off all notifications for the other three, but they are still coming in. Am I doing something wrong?

Thanks,
T

Via the watch app on your iPhone, the settings should be similar to what is depicted in the attached screenshot.

Got it...that's exactly how I have mine set up. Every email is still coming in.

Hmmm, that's strange. You're definitely not doing anything wrong, and I've had my  watch for over a year and a half with those same Settings and I only get email notifications on it via the two I designated therein. You might want to in-pair and then pair it again with your iPhone to see if that'll fix the problem.

My Watch app is set up the same way as J_M_D's app, and I only get the one email I want (VIP list). All the others stay on the phone.

I'd try a restart of both devices, then a de-pair/re-pair if that didn't work.
