Is it okay to leave my Apple Watch docked all night charging?

Just like with all of Apple's lithium batteries, it's perfectly safe to charge your Watch overnight.

Shouldn't effect anything. I've had mine shortly after release and I change mine overnight every night

I think that's the way to go. Do it for mine without any issue. It might help to get a dock for it as well.
