    I used to stream from my iPad and iPhone to my ATV. Now I don't have the option on my devices. The only option I get is a "closed caption" option.

    Swipe up the Control Center from the bottom of the display on the device you're using and you'll see the AirPlay button there.

    Since iOS 8 Apple has removed the AirPlay symbol when playing a video on the device for some reason.
