Hi, I currently have a Mac Mini and I'm outputting 5.1 to my receiver using HDMI. I grab and MKV and using VLC I select as the audio output "HDMI (encoded output)" and it works perfectly with movies and series and using 5.1 speakers.

Is there any way to do this with Apple TV and Airplay or is it only possible using HDMI?

    Thanks

I'm not exactly sure what you're asking.

I use XBMC on my AppleTV 2, and it sends 5.1 video out via HDMI. I have not tried using AirPlay, since XBMC is all that I generally use to play content.

Right, but you had to jailbreak your Apple Tv. I want to use the Mountain Lion Airplay mirroring feature that will allow to show MKVs in a big screen BUT I was not sure about the audio output.
