The iPhone should automatically wake up and go to Apple Pay when it detects that it's near a card reader. If you hold your thumb over the Touch ID sensor and move your phone toward a card reader it should automatically open Apple Pay and process your transaction using your default credit card in one quick motion.

This is what I do. There's an option to turn it on in Settings -> Wallet and ApplePay

How safe is Apple Pay actually?

If double click the home button to activate apple pay couldn't someone who stole your phone use your card?
