I used the script bamf posted earlier for wi-fi but changed the name of the contact to "Wireless".

I couldn't get this to work until I put the contact in as First: Bluetooth Last: Bluetooth (But I only have to say "Bluetooth," not "Bluetooth Bluetooth." I couldn't get it to work as Company or last name only. Pretty cool!

It could also be how Siri understands you. The name is not the important thing. It is the URL.

Call the items whatever you want. Call WiFi "Da Wifis" as long as Siri understands.

prefs:root=AIRPLANE_MODE does get to switch mode into Airplane.

Maybe there is deeper keys like General&path=Bluetooth&path=BLUETOOTH or General&path=Bluetooth&YES?

Siri isn't taking an action, it's launching a URL. The URL doesn't toggle the setting, just gets you to the page in that application.

Check the Airplane url - it's actually turning iPhone in airplane mode. The thing is it's not a menu item, but just a root control.
