- 6 potatoes
- 1/2 onion
- 1 egg
- Olive oil
- Cold butter
- salt and pepper
Grate the potatoes and onion and then wring out as much liquid as you can. Add the egg and start to mix, adding olive oil until it's moist and clings together. Grate in some butter and fold in lightly (think pastry, you don't want it mixed, just spread out).
Spoon it into a hot pan and cook until golden brown.
For a variation, today I added a second egg, half a block of Parmesan cheese, and used green onion instead of regular onion. Turned out great!
