rdiddy_25 brought up the point I was going to bring up. If you've sent/received a lot of MMS then that will take up quite a bit more room than you realise as those pictures are stored in the "other" section of memory.

As stated, it depends how you backed up your iPhone prior to the restore (did you back up to iCloud or iTunes?) and what you did after the restore was complete (set up as new or restore from a back up?). If you've backed up to iTunes on your computer, then plug in your iPhone and restore it...

Jailbroken for me. But I don't go overboard with it. I mostly just want little tweaks such as having the keyboard show the case I'm typing in (upper/lower) or having folders close automatically after launching apps. I use maybe ten of these types of tweaks. No big customisations for me.

I'm perfectly happy with iOS 6 on the 4S. If I had to pick one thing I disliked, it would probably be that some of my favourite less well known jailbreak tweaks haven't been updated to iOS 6 yet (but that's not the fault of the device or the iOS version).
