Jailbreak Issue

AppleCare+ voids warranty of any jailbroken apple device. Mine has water damage and is jailbroken and stuck in recovery mode. If I dont want them to know it can I just break (jam) the dock on the bottom of the iPhone?

First of all, what you're suggesting is called Fraud. Second of all, if you have water damage, they aren't going to do anything anyway as that's not covered.

If you have AC+ just take it into the Apple store and pay the $50 replacement fee. I haven't heard of a case where a iPhone user who had Apple Care Plus was denied a replacement device because their iPhone was Jailbroken.
