iPhone 4s 5.1 beta revert back to 5.0.1

how do i go back to 5.0.1 while keeping all the stuff i have now...i tried to save it and it said that i can't restore it because 5.0.1 is outdated compared to 5.1...and when i tried to restore from cloud it said there is no backup history
