It seems that Apple has been holding out on us: the camera app has a built-in panorama option that was left disabled in iOS 5. Developer and hacker has figured out : So, I found out how to enable Panorama is the iOS Camera app. Set the key 'EnableFirebreak' to YES in com.apple.mobileslideshow.plist
For those not interested in hacking around in their own .plists, fellow developer has to Cydia that will enable the feature; it should be available within 24 hours.

Can the plist be edited in an iPhone 4s backup and restored to the phone?
Not sure, but even if yes I'd imagine it would be much easier to do on the device.
That would be true except for the fact that the 4s has not been jailbroken yet
Sorry, when I see 4s I always think people means "4's" as in "an iPhone four's backup." I think of the new phone when the s is capitalized: 4S. It's been confusing when dealing with jailbreak issues.
