What would happen if i jailbroke an already jailbroken ipod touch redsnow 2.2.1?

okay i need to re jailbreak my already jailbroken ipod touch because i download that winterboard app and now i cant download anything else and i cant remove it because it gives me an error so i just wanted to start over. but im not sure if i should because idk what would happen and i dont want to risk bricking my ipod also i have a 2nd gen

You have to restore, then re-jailbreak if you"want to "start over".

when u say restore do you mean restore through itunes and if so will i still be at 2.2.1 afterwards or will it update me to the current version?

Well, why don't you just upgrade to 3.1.3 for the iPod touch, then jailbreak with Spirit? It's a pretty fast process...
