5 Icon Dock
Winterboard

Those are the only 2 I've gotten so far. Working on customizing it the way I want it, so I'll be tryin more and different things soon.

Here are the JB apps I have installed and find integral to everyday use. Apologies that the list is kind of long:

TetherMe - much cheaper ($2) than MyWi; does not have WiFi tethering but does have Bluetooth, which is all I need and considerably easier on the battery
3G Unrestrictor - older and better than My3G, imho
ultrasn0w
Winterboard
SBSettings - with Retina Display theme iNzoSB; also use to hide "background" apps like MakeItMine
Backgrounder - still useful for apps that haven't been updated for iOS4
Installous - curiosity killed the cat
Signal - so THAT is where those bloody towers are
MakeItMine - because I am vain and like to see my name in the status bar
Infinifolders
FolderCloser - auto-close folders after app launch
Five Icon Dock
Shrink & Iconoclasm - 5x4 app icons on homescreen at 90%, or any other %, original size
iFile - view and manage system files
Safari Download Manager - allows you to download any file to your iPhone (as can be said for anywhere on the tubes, I am careful what I download is reputable and, perhaps more importantly, iPhone-compatible)
QuickReply - reply to texts in other apps
SMS2Mail - back up my text messages
Notified - keep track of notifications
Locktopus - so people messing with my iPhone won't accidentally brick it somehow finagling with jailbreak apps
SnapTap - take pictures using the volume buttons (!)
PDF Patch - for 4.0.1

EDIT: Updated with new apps as of 8/28.

For me, I like the following:

Winterboard
biteSMS
iBlacklist
Recent/CallLog Delete
ultrasnow

I'm also like iProtect but haven't had much experience with that yet.

Here are a few of my faves:

AT&T Carrier Logo iPhone4 (it just looks so much better than the stock one and it supports the retina display)
CyDelete
MultiIconMover (you must get this one, makes moving around apps on the springboard so much easier)
Action Menu - (plus pack - lets you do soooooo much more with highlighted text)
SBSettings
Rock
Notified (it's an app, that keeps track of all of the notifications, not as good at lockinfo, but a little more basic and free)
GVmobile +
3g unrestrictor
fakelocation (gotta have it to watch the phills!!!)

the developer said he will update the program (after previously saying he would not) and, supposedly, an update for iOS4 will be out by the end of the week.

Interesting. I just got an email from him a couple of hours ago implying that yes an update is coming but he has no intention of giving out any time frame for when that will occur.

I would be very happy if it was by the end of the week but that wasn't how it sounded from the email. Hope I'm wrong.

I'm not sure i agree with genius. The point of jailbreaking is to break free of Job's iron grip over what you're supposed to be able to do. If an independent developer makes a good app that requires a JB phone, i don't see why there should be a philosophical objection to paying for it.
